Vicki Gerberich is a Certified Master Nutrition Therapist and Holistic Healthcare Professional who bridges the gap between allopathic and natural medicine.  Nutrition Therapy involves the use of nutrients in whole foods to improve your body’s overall health and well-being.  There are hundreds of diets out there that may work for some people but not for others.  Each of us has an individual chemistry that requires an individual diet. 


My Methods & Support Modalities:  Working with Vicki, you will benefit from her strong intuitive sense coupled with with integrative recommendations regarding your health and happiness.  There are a variety of ways that you can receive individual therapy; from a base level "Welcome to Wellness" review to the Comprehensive Nutrition Therapy Profile Assessment that includes a personalized profile that targets hormone balance, auto-immune conditions, chronic fatigue, brain health (mood and behavior disorders) and weight management concerns.  You may choose to couple the therapeutic profiles with additional support, including lifestyle support in the form of a day long Healthy@Home Immersion to the monthly momentum food therapy support plans.  

If your diet is causing you illness and you do not address it, you could end up suffering for many years, spending thousands of dollars for treatments that will never work or that are just masking the symptoms…and not addressing the cause.  The era of sweeping dietary recommendations–often known as fads or best guesses-has come to an end. Red wine may be better for your arteries than ice cream, but you can’t create a one-size fits all diet that is optimal for everyone.  Individuals have widely varying responses to high or low-fat diets, wine, salt, dairy, wheat, even exercise.

My Way to Wellness: a Functional Approach

I approach health and wellness holistically, which means that I look at how all areas of your life are connected.  Does stress at your job or in your relationship cause you to overeat?  Does lack of sleep or low energy prevent you from exercising?  As we work together, we look at how all parts of your life affect your health as a whole. In the same respect, I take a functional approach to supporting your health and wellness; is chronic stress and high cortisol compromising your immune system, causing a decrease in your IgA (the primary immune antibodies found in your gut). With decreased IgA, one is more susceptible to leaky gut and food sensitivities….and low IgA is associated with a lowered thyroid function.  Thus, popping thyroid medication may just be covering up the bigger issue: impaired digestive function.  See how it all works together and why a comprehensive approach to health and wellness is necessary for an effective wellness program?

                                                 Step 1:  Choose YOUR Approach                                                                       
Nutrition Therapists take a comprehensive health history as their primary tool for assessment.  Any program that doesn’t take your likes & dislikes, lifestyle and unique biochemistry into account is destined to fail.  More importantly, the program must be one that you can work into your daily life so that it becomes habitual and sustainable.  
  • For those with a chronic condition or situation that has a bit bigger of a gap to bridge or a few more dots to connect, you will benefit from a more comprehensive approach, one that includes the functional nutrition testing and the completion of a Comprehensive Health History (90+ minutes) with health history, wellness and food review and symptom observation assessment. This assessment process provides you with a more personalized plan specific to your unique bio-chemisty and metabolic profile.  
  • If you choose a personalized program, meaning that you would like to receive recommendations or guidelines specific to you, whether it be working together one-on-one, in a small group setting, or receiving a "My Wellness" self-guided care kit, at the very least, the "Welcome to Wellness" Assessment must be completed.  This online assessment includes a review of your current eating and lifestyle patterns and a Symptom Observation Assessment from which you will have the option to either receive your Report of Findings via email with no follow-up discussion or schedule a 30 minute strategy session and review to discuss your results.
  • If you prefer to self-navigate your way to wellness, enroll in the EatGreen Community or the Livin' Lean Lessons - a series of self-study courses (check the calendar for the guided "interactive" courses)!  You will still have the opportunity to interact with and receive support from the Wellness Guides and the community.
                                                                    Step 2:  Choose YOUR Support                                                                     
  • Follow-up support sessions are for those who would like the guidance necessary to keep their health on course after they complete their personal nutrition profiles.  Through individual sessions and online guidance, your progress will be monitored and the plan adjusted on a regular basis as we move along the path towards balance.
  • The Healthy@Home Immersions are for those who need a bit more hands-on guidance on how to get it done.  Maybe you have a difficult time implementing the recommended lifestyle tips, or you get stuck because the enemy is in the house. A Healthy@Home Immersion usually does the trick by supporting you with hands-on grocery shopping tips, meal creation, and food choice tips.
  • The food therapy support sessions, are for those who would like the accountability and the guidance or their own personal "guide" or maybe even the support of a group with occasional personal guidance.  If you find yourself having a difficult time making the transition to healthier food and lifestyle choices or run into roadblocks (often emotional), the Food therapy support sessions  offer the guidance and support to find the detours around those roadblocks. 
  • If you chose the "self-guided" way to wellness, but would appreciate the support from a community of women traveling a similar path to the same destination, become a member of the EatGreen Community...an online community with an interactive forum, access to a library of resources, information and recommendations that you are able to access at any point in your day.

A Food Therapy Guide is like a coach who helps you discover where you are and where you want to go. Guides work on creating solutions and effecting change in regards to your eating and lifestyle habits; helping people to set and reach goals that they might otherwise not achieve without support.


Your guide will motivate and support, using their experience to provide the resources and tools that will help you to achieve your goals and to coordinate the many resources and health care options available through this and other programs. During your program, you'll also be completing check-in forms and making status reports so that we may address any problems or questions during the next sessions. 


Unlike traditional medicine which is geared to treat symptoms, a broader, more holistic approach will be taken; one that focuses on prevention, implementation strategies and results. The Food Therapy Guides of Earth and Water Wellness combine therapeutic nutrition, body typing, intuitive eating techniques and lifestyle coaching, as they also consider lifestyle and environmental sustainability factors when working with clients. Beyond the support you receive from your personal food guide, you also have the support of the Earth and Water Wellness Online Community, and group support options, if you choose.

When convenience foods are so prevalent and seemingly cost-effective, it can be difficult to want to eat whole foods or even know where to begin. The large array of these foods, most of which are low in quality, high in quantity and heavily contaminated with chemical preservatives and artificial colors and flavorings has done many of us a huge disservice. Eating whole, natural foods is not as overwhelming and time consuming as many may think!

The program takes place in your own home, empowering you to develop your intuition around food and nourishment within your daily environment.  No more excuses.  You will build the capacity within your own home to live healthy and clean, creating your own personal daily wellness immersion. Your retreat day will be packed with information and practical ways for you to incorporate healthy nourishing foods into your daily life.


Most days start at your home, where we will take a quick inventory of things, followed by a trip to the local market.  After the market, we will head back home to clear out, organize, declutter, cook, learn, sit, quiet the mind, take in the nourishing meal, and delight in the joy of preparing and eating and much, much more!  You will come away knowing how to purchase and prepare nourishing and delicious foods in your own home!

With functional testing, a more in-depth assessment of your current state of health is attained and can guide the development of your program for optimal supplement and dietary support. Functional tests are used to identify how well various systems within the body are working and measure the progress of the recommended protocols.


Oftentimes, an acute care model directed at suppressing the expression of symptoms is implemented instead of a functional health model.  Acute care is invaluable for trauma and emergency care, but can be problematic for chronic disorders. Suppressing symptoms long term can lead to changes in many physiological systems.


Assessing one’s blood chemistry results based on a functional model of wellness, we can often identify metabolic imbalances and physiological challenges that may be the aggravating cause of chronic illness and stress disorders or general discomfort and diminished quality of life.

Comprehensive Wellness Assessment - The program begins with a Comprehensive Wellness Assessment, lasting on average 1½ hours, during which we will review your medical, nutrition, and diet history as well as your lifestyle patterns and discuss your concerns in detail. You will be asked to complete a few forms prior to the session which will be discussed during our time together.

The comprehensive wellness assessment is the first step in your nutrition and wellness program; a review of your current eating and lifestyle patterns, health history, personal goals, concerns and expectations will all be discussed during the session, from which you will receive foundational recommendations and Wellness Action Guidelines for immediate  implementation. This assessment is often followed up with any additional tests and the Strategy Session, detailing next steps and therapeutic outline.

Functional Nutrition Analysis - After completing the Comprehensive Wellness Assessment, we will have a good understanding of your situation and the appropriate test profile(s) to complete the Functional Nutrition Analysis, evaluating your physiology and metabolic imbalances through a blood chemistry analysis, saliva and/or stool testing.

Report of Findings & Strategy Session - A plan is put together based on the analysis of the Comprehensive Wellness Assessment and Nutrition Profiles. The plan will include recommendations for whole foods, therapeutic supplements, herbs and lifestyle changes to restore balance and target your specific needs and goals.

Continued Care Options - Ongoing support is recommended in order to evaluate the effectiveness of the program and determine if any adjustments need to be made along the way.  If you choose personal follow-up support, single or packages of six (6) follow-up sessions are available. Additional options include enrolling in a group or community membership.  

Creating balance and developing mind-body consciousness is a process that takes time. Often you experience a lot of changes in the first six months, but still need additional and on-going support, which is why I created the Online Membership Community
