At the Institute, we are concerned about the personal and environmental impact of processed foods and poor nutrition in the U.S. and around the world. The mass consumption of nutritionally depleted, high calorie foods is now a significant factor in the exorbitant cost of medical care. Food production from the farm to the table has been based on profit, consumer convenience and addictive taste, rather than on providing wholesome foods that support health and longevity. In a large percentage of American households, over-consumption and malnutrition are contributing to obesity, diabetes, heart disease and many other physical and mental health conditions. A significant part of the answer to our national health crisis lies in good nutrition, the cornerstone of health and vitality.
Cancer, obesity, heart disease and diabetes, along with many other conditions, are the products of stressed lifestyles that center on processed convenience foods. They are tasty and cheap, yet the price we ultimately pay is our health. At the Institute, we believe that the road to vitality is through nature and her back to basics nutrition from sustainable agriculture.

But, our approach is to empower individuals with the information through educational courses that allows students to understand their state of health and happiness in a more holistic manner.
